Ceremonial matcha comes from the first harvest, with young leaves that have been shaded for a long time. It is slowly stone-ground, offering a rich umami flavor, a silky texture, and no bitterness. Regular matchas are often more bitter, less refined, and can be used in cooking.
Is the matcha certified to Japan Agricultural Standard (JAS)?
Yes. This matcha is JAS certified, which guarantees cultivation without pesticides or synthetic fertilizers, according to the strictest Japanese agricultural standards.
What is the Samidori cultivar?
Samidori is a traditional Japanese cultivar, highly prized for ceremonial purposes. It produces leaves rich in L-theanine, with a naturally sweet taste, a pleasant roundness, and an intense green color. It is one of Uji's favorite varieties for premium matcha.
Does matcha contain caffeine?
There are approximately 30 to 35 mg of caffeine per gram, or 60 to 70 mg for a typical 2g dose. This is equivalent to an espresso, but without the jittery spike: L-theanine slows down absorption and promotes calm and prolonged alertness.
Can I drink matcha every day?
Yes, no problem. Up to 2 to 3 cups a day if you tolerate it well. It's stimulating without being overstimulating, making it an excellent alternative to coffee, especially in the morning or before work requiring concentration.
