Preparation

Cold Hojicha Latte:
3 g of Hojicha powder
30 ml of hot water (85°C)
120 ml of milk
5-6 ice cubes
→ Whipping with a chasen
→ Add a sweetener (optional)

Hot Hojicha Latte:
2 g of Hojicha powder
40 ml of hot water (85°C)
130 ml of milk to be frothed
→ Whipping with a chasen
→ Add a sweetener (optional)

Conservation

Matcha is a living powder: it deserves care and attention.

  • Keep it away from light to preserve its vibrant color.
  • Carefully close the jar after each use to prevent oxidation.

Yabukita, selected at the beginning of the 20th century in Shizuoka by Sugiyama Hikosaburo, owes its name to the place where the mother plant was found ("north of the bamboo grove") and has become Japan's number 1 cultivar for its vigor and consistency, often used to bring freshness and structure.

    Pour 40 ml of hot water, then whisk in a W motion using a chasen.
