Preparation

Cold Matcha Latte:
3g of matcha
30 ml of hot water (83°C)
120 ml of milk
5-6 ice cubes
→ Whipping with a chasen

Hot Matcha Latte:
2g of matcha
40 ml of water to dissolve
130 ml of milk
→ Froth the milk for a creamy drink

Conservation

Matcha is a living powder: it deserves care and attention.

  • Keep it away from light to preserve its vibrant color.
  • Carefully close the jar after each use to prevent oxidation.
  • Keep it in a dry place, or ideally in the refrigerator after opening.
  • Consume it within two months of opening to enjoy its full freshness.

Yabukita, selected at the beginning of the 20th century in Shizuoka by Sugiyama Hikosaburo, owes its name to the place where the mother plant was found ("north of the bamboo grove") and has become Japan's number 1 cultivar for its vigor and consistency, often used to bring freshness and structure.

Okumidori, a late-flowering cultivar originating in Shizuoka and later widely established in Kyoto and Kagoshima, is distinguished by its very good shade tolerance: it produces a deep green color and a sweet umami, which has made it a modern base for tencha and premium matcha.

    Place 2g of matcha in a chawan or bowl

  • Whisk

    Pour 40 ml of hot water, then whisk in a W motion using a chasen.

  • Adapt

    Stir in 120ml of hot or cold milk, as you prefer… with or without sweetener.

What is the difference between Fauna and ceremonial matcha?

Faune is a premium matcha made from the youngest leaves of the first harvest.
It differs from ceremonial matcha by a different grinding process, which gives it a more pronounced and aromatic profile, with a slight bitterness.
Less silky than a ceremonial matcha, Faune seduces with its liveliness and power, ideal for lattes, recipes or more indulgent preparations.

Is Faune organic?

Yes, Faune is JAS certified, the Japanese equivalent of the organic label. It is therefore grown without pesticides or chemical fertilizers, according to Japanese organic standards.

How to consume Fauna?

Faune is best enjoyed as a latte, where it reveals its full aromatic richness. It is often more harmonious when served cold than hot.
Its slight bitterness balances perfectly with sweet or indulgent drinks, offering an experience that is rich, powerful and balanced.

Does matcha contain caffeine?

There are approximately 30 to 35 mg of caffeine per gram, or 60 to 70 mg for a typical 2g dose. This is equivalent to an espresso, but without the jittery spike: L-theanine slows down absorption and promotes calm and prolonged alertness.

Can I drink matcha every day?

Yes, no problem. Up to 2 to 3 cups a day if you tolerate it well. It's stimulating without being overstimulating, making it an excellent alternative to coffee, especially in the morning or before work requiring concentration.
