
How to Use and Maintain a Chasen: The Matcha Whisk

But be careful, it's not enough to take it out of the cupboard for it to do the job all by itself! A good matcha , with a perfect foam and a silky texture , requires a chasen that is well used and well maintained .

Using the Chasen
Prepare the chasen before use
Before whisking, soak your chasen in hot (but not boiling) water for one to two minutes . This softens the strands , prevents breakage, and improves the whisking.
Whisk like an expert
- Whip using M or W motions .
- The goal: to dissolve the powder and create a light foam .
- The movement should be quick and fluid , but without crushing the strands at the bottom of the bowl.
Tip: Hold the chasen at a 45° angle to the surface of the liquid and move your wrist for perfect mixing.
Chasen Maintenance
After each use
- Rinse immediately with warm water, without soap.
- Make a few whisking movements in clear water to thoroughly remove any residue.
- Shake gently to remove excess water.
- Leave to air dry , ideally on a chasen rack (kusenaoshi) to keep its shape.
What to avoid
- Do not soak for too long, as this could weaken the bamboo.
- Do not store wet in a cupboard, humidity promotes mould.
- Do not dry with a cloth, this could damage the strands.
- Do not expose to a direct heat source, this could deform the bamboo.

- Avoid direct sunlight , which can make bamboo brittle.
- Use a suitable support : if you don't have one, place the chasen upright on a clean surface to dry.
