Comment utiliser et entretenir un Chasen : Le fouet à matcha

How to Use and Maintain a Chasen: The Matcha Whisk

If you're a matcha fan, you absolutely can't miss the chasen, that little bamboo whisk that makes all the difference. It's not just an accessory: it's the key tool for transforming matcha powder and water into a frothy and smooth drink.

But be careful, it's not enough to just take it out of the cupboard and expect it to do the work all by itself! A good matcha, with a perfect foam and a silky texture, requires a chasen that is used and maintained properly.

Good news: it's not complicated! With a few simple steps, your chasen will be with you for a long time for successful matcha moments.

Use of the Chasen

Prepare the chasen before use

Before whipping, soak your chasen in hot (but not boiling) water for one to two minutes. This softens the strands, prevents them from breaking, and improves whipping.

Whip like an expert

  • Whisk using an M or W motion. The movement should be quick and fluid, but without crushing the strands at the bottom of the bowl.

  • Use a bowl that is wide enough with high enough sides to allow enough space to whisk easily without the mixture overflowing.

  • The goal: to dissolve the powder and create a perfectly homogeneous, foamy mixture.

After each use

  • Rinse immediately with lukewarm water, without soap.

  • Shake gently to remove excess water.

  • Allow to air dry, ideally on a chasen (naoshi) support to maintain its shape.

What to avoid

  • Do not leave to soak for too long, as this could weaken the bamboo.

  • Do not store wet items in a cupboard; humidity promotes mold growth.

  • Do not dry with a cloth, this could damage the strands.

  • Do not expose to a direct heat source, as this could deform the bamboo.

Additional tips

  • Avoid direct sunlight, which can make bamboo brittle.

  • Use a suitable support: if you don't have one, place the chasen upright on a clean surface to dry.

  • Choose a quality whisk: a high-end bamboo chasen will last longer and create a finer foam.

A well-maintained chasen can last several months, or even longer. Over time, some strands will wear down or split, which is perfectly normal. It's also a good opportunity to try a new model and continue enjoying your favorite matcha.
